Begin by cooking 4 cups of rice (preferably day-old) and set it aside. Having cooked rice that is cooled makes it easier to fry.
Season the beef with salt and pepper and set aside.
In a wok or large pan, heat the oil over medium heat. Add the garlic and shallots and fry until fragrant, about 2-3 minutes. Add in the red chilies and fry briefly if you prefer less spicy or longer for more heat.
Add the beef to the wok and sauté until the beef is cooked through, about 5-7 minutes depending on the size of the beef cubes.
Add the cooked rice to the pan and stir to combine with the beef and aromatics. Add in the sweet soy sauce, oyster sauce, and fish sauce, stir thoroughly to ensure everything is coated well.
Turn up the heat to high and fry the rice until each grain is coated with the sauce and the bottom of the pan is slightly charred, for a more flavorful taste. You can add additional oil if required.
Serve hot, garnished with some sliced cucumbers or tomatoes. You can also top the rice with a fried egg or some crispy fried onion for added texture and flavor.
